Water is so ubiquitous that it has, to a greater degree, been overlooked in molecular biology. This book looks at the biochemical and thermodynamic properties in relation to polypeptides, nucleic acids, polysaccharides and lipids. Water is so pervasive that it would be an impossible task to cover all its features. With this in mind each contributor has taken special care to refer to other review articles or books to allow the reader to further expand their knowledge.
